Chinese hot pot base chilli sauce

Ingredients:
Liquorice 10g
Clove 10g
Gui Zhi 10g
Tangerine peel 10g

Bay leaf 10g
Cao guo 10g
Bao Jiao 10g
Erjing tiao chilli 100g
Bell pepper 10g
Dahongpao pepper 10g

Sesaoning ingredients:
Shallot oil 1kg
Bird Hot pepper powder 30g
Chilli powder 50g
Sichuan pepper(chaotianjiao) powder 20g
Crystal sugar 50g
Pixian bean paste 500g
Rice wine 100g

Steps:
1. Add shallot oil to the pot, fry all the Chinese herbs, and then add in Dahongpao pepper and bell pepper to stir fry with the herbs.
2. Add in Pixian bean paste, rice wine and chili powder and stir fry together with the herbs.
3. Add in rice wine and crystal sugar into the pot, slowly stew.
