Shallot Pancakes

Ingredients: 
Plain Flour 600g
Water 120g
Boiled Water 250g
Chopped Shallots

Condiments:
Salt 10g
Shallot oil
White pepper

Steps:
1. Sift the gluten flour, add salt, pour in boiling water and stir, then pour in cold water and mix well.
2. Stir until flour is well mixed, add a little shallot oil, rest for 20 minutes, and then divide into 6 small pieces.
3. Stir in the shallot oil with white pepper and chopped shallots.
4, Spread shallot oil on the table, roll the dough into rectangular shape, spread with seasoned shallots.
5. Roll the crust in to a long strip and roll it up, rest for 15 minutes.
6. Add a little shallot oil to the pan and fry until golden brown on both sides.
