Sesame Swiss Roll
The Sesame Swiss Roll is great to eat it when it is cool.
The soft Swiss roll is great with a strong sesame flavor.
It is perfect to have it in summer.
Ingredients:
3 sliced Gelatine, milk 225 grams, granulated sugar 120 grams, corn flour 30 grams, black sesame sauce (or white sesame paste) 75 grams
Salt-free cream 40 grams, low-gluten flour 80 grams, black sesame powder 30 grams, black sesame sauce 30 grams, egg yolk 160 grams, granulated sugar 40 grams, egg without yolk 240 grams, granulated sugar 120 grams
Animal cream 100 grams, granulated sugar 10gram
Method:
1. Put gelatin in the icy water.
2. After mixing the milk, sugar and corn flour, heat it to a temperature about 85 °C.
3. Add white sesame sauce (or black sesame paste) and mix well, then pour into the model, and then freeze.
4. Cake: The salt-free cream is heated to a liquid state.
5. Egg yolk with fine sugar 40 grams heat into an emulsified water, egg without yolk and sugar into a cream.
6. Pour the cream into the emulsified water, then add the flour and black sesame powder to make a uniform sesame batter.
7. Pour a small amount of sesame batter into the melted butter, stir and mix well with the remaining sesame batter.
8. Pour the sesame batter into 2 baking plates. The above and below plates are about 190 ~ 200 ° C, and bake for about 15 minutes.
9. Cut the cake half, spread the animal cream, put the sesame ingredient, roll it up and refrigerate it.
