Sesame Puff

Ingredients:
Water 100g, salt-free cream 60g ,Low-gluten flour 70g Whole egg 160g Black sesame powder 30g
Yolk 80g, fine sugar 120g, low-gluten flour 40 grams, milk 300g, black sesame sauce (or white sesame sauce) 100 grams, salt-free cream 160g
Method:
1. Water and salt-free cream are boiled over low heat. After turning off the heat, pour low-gluten flour and black sesame powder into a uniform sesame batter.
2 When the temperature of sesame batter is about 60 ° C, add whole egg liquid in several portions and mix well.
3. Squeeze the sesame batter onto the baking sheet. After the oven is preheated, the top plate is about 190-200 ° C, the bottom plate is about 170-180 ° C, and bake about 25-30 minutes.
4. Stir egg yolk and fine sugar well, then add low-gluten flour and milk, stir well with heat.
5. Stir until thickened with heating, then add white sesame sauce (or black sesame sauce) and salt-free cream. Stir well and let it cool.
6. Cut the cold sesame puff into two, then fill in the appropriate amount of sesame filling.
