Sesame Marbled Toast
Sesame smell is spreading out when the sesame marbled toast is cut.
The black and white color is really pretty.
Sesame marbled toast is great for the afternoon dessert.
Ingredients:
Sponge-Dough (a serving can make a 450g toast):
232g bread flour, water 133g, 2g Instant Dry Yeast, salt 3g, skim milk powder 7g
The main dough, bread flour 100g, skim milk powder 14g, 1g Instant Dry Yeast, salt 3g, sugar 40g, salt-free butter 33g, egg 40g
Method:
1. Prepare for Sponge-Dough, and the yeast is dissolved in water first.
2. Mix all the ingredients besides salt. Add salt to the batter as the last infredient.
3. Make a smooth dough, wrap it in plastic wrap and put it in the refrigerator (lower layer) for at least 17 hours.
4. For black batter, mix all the ingredients besides salt and butter.
5. Slowly add the Sponge-Dough and salt.
6. When the dough starts to become smooth, you can add butter.
7. Both black sesame and white sesame dough are ready.
8. Put the dough in a large bowl, wrap it with food wrap, and start the first fermentation.
9. Ferment for about 25-30 minutes, until the dough doubles the size.
10 Divide the black and white dough into two equal parts
11. Pat the dough to let the air out, make it rounded, cover it with food wrap, wait for 25-30 minutes.
12. Pat black and white dough and flatten the dough.
13. Put them together and flatten them.
14. Roll it up.
15. Flatten again and the width is about the same as the toast.
16. Then roll the dough up.
17. Start the final fermentation process, which takes about 1 hour.
18. Wait until the dough becomes 80% big as the toast mold.
